Dreamy Sweet Potato Brownies
Sweet potatoes create a fudgy wonderful texture for the brownies, and bring lots of great nutrition too. Make these for your friends 🙂 And enjoy!
Ingredients:
Wet:
2 large eggs, whisked
2 cups baked sweet potatoes, remove skins and puree in a baking mixer or food processor
1 cup cooking oil or melted butter
2/3 cup maple syrup
2 tsp vanilla extract (optional)
Dry:
1/2 cup flour
2/3 cup cocoa powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1 tsp sea salt
1 cup chocolate chips
Preheat oven to 350 degrees Fahrenheit. Oil a 9×13 inch baking dish (wipe inner surface with butter or oil just enough to coat, so the brownies come out of the pan easier).
Mix dry ingredients in a bowl: flour, cocoa powder, baking soda, cinnamon, salt and chocolate chips.
Puree the baked sweet potato (without their skins) in a baking mixer or a food processor until smooth.
Then combine wet ingredients in another bowl or the mixer: eggs, pureed sweet potatoes, oil or butter, maple syrup and vanilla.
Mix wet and dry together folding gently until well incorporated. Do not over mix. Pour into the prepared baking dish and spread into an even layer.
Bake for 45 minutes, or until a toothpick or thin knife inserted comes out clean. Let cool about 10 minutes before cutting and then dig in!
