Oven-Roasted Asparagus
Optional additions to roast alongside, cubes of tofu, a can worth of chickpeas, slices of radish or beets, sticks of carrot – size the roots a little thinner than asparagus for more even cooking. Another option, add chopped chives or green garlic in second half of cooking time. Bake at 400 until tender, or starting to brown. You can stir them once if you are like me and enjoy them cooked a little longer and browner. Sea salt to taste.
