Homefry Pie

1 onion, diced potatoescolors
2 lbs potatoes, grated
3 cloves garlic, minced
4 stalks celery, minced or one medium/large celeriac root grated
2 beets, grated (opt)
¼ cup oil or ½ can coconut milk
1 tsp. curry powder
1 tsp. salt

If you have a grater attachment for a food processor, that makes quick work of the grating. Swap in other root veg for the beets if you don’t have, like carrots or turnips. Mix all ingredients in a large bowl until well combined. Pack into a cake pan, pie plate or bread pan and bake for an hour at 350° until the top is brown and a fork stuck in the center brings out cooked potatoes.
